We don’t really go in for signature dishes at @londondiningconcept. Evolution in food and process is so important but if pushed @cheftomwhitaker would probably choose this one, which is bizarre as it’s #vegetarian. We blacken whole celeriacs in hot coals then slice raw on meat slicer and preserve in cardamom and walnut oil. Processes such as #pickling, #fermenting, #dryaging and #curing are all classic ancient techniques for preserving fruits vegetables and meat during time of plenty. These are heritage tomatoes, they’ll ferment for 3-4 weeks before being fully preserved and shelf stable.
